Toasted Ravioli

Try this easy to make crispy and golden Toasted Ravioli appetizer! Filled with cheesy goodness and a homemade Greenhouse grown tomato sauce, it packs big flavour in every bite.

Sauce:

  • 8 GREENHOUSE Tomatoes-On-The-Vine

  • 1/2 onion, chopped

  • 6 garlic cloves, peeled and sliced

  • 1 bay leaf

  • 1 tbsp honey

  • 2 tsp dried basil

  • 1 tsp oregano

  • 1 tsp salt

  • 1/2 cup red wine

  • 1/2 tsp ground black pepper

  • 1 tsp fennel seed

  • 1/4 tsp crushed red pepper

  • 2 tsp balsamic vinegar

  • 3 tbsp olive oil

Ravioli:

  • 1 lb cheese ravioli

  • 2 large eggs

  • 2 tbsp water

  • 1 cup plain panko breadcrumbs

  • 1/4 cup grated parmesan, powder form works best

  • 2 tsp Italian seasoning

  • 1 tsp garlic powder

  • 1 tsp kosher, coarse salt

  • Cooking spray

INGREDIENTS

  1. Make the sauce, in a pot heat olive oil over medium heat. Add onion and cook for 5 minutes.

  2. Stir in tomatoes, garlic and bay leaf, bring to a boil and reduce heat to medium-low and simmer for 30 minutes.

  3. Stir in red wine, honey, basil, oregano, salt, pepper, fennel seed and crushed pepper, cook for another 30 minutes. Add balsamic vinegar and remove bay leaf, stir until combined.

  4. Preheat oven to 425°F. Place wire rack on top of rimmed baking sheet and spray with oil. Set aside.

  5. In a shallow dish hand-whisk the eggs and water until fully incorporated.

  6. In another shallow dish, combine the panko, parmesan, Italian seasoning, garlic powder, and kosher salt. Hand-whisk to combine well.

  7. Place a single layer of fresh ravioli in pan with egg mixture. Working one at a time, turn ravioli over to coat with egg mixture. Let excess drip off and coat generously with panko mixture. Press crumb mixture to adhere on both sides of ravioli. Place coated ravioli on greased wire rack. Give at least 1-inch space between each ravioli for even browning. Spray tops of ravioli with cooking spray.

  8. Bake 15-20 minutes or until tops are golden brown and crisp — check about 10 minutes in for browning; if it’s browning too quickly, cover loosely with foil and continue baking until cooked through.

  9. Serve immediately with marinara sauce. Sprinkle extra parmesan cheese on top if desired.
